All roads lead to Rome! If Roman roads are so famous the Ancient Appian Way is the Queen of the Roman Roads and you'll see it exactly as it was 2000 years ago. First we will meet at the Bar and have a coffee before we start. Than we'll bike through a park, to the most ancient Roman road, the Appian Way, with glimpses of rare beauty, and get to the ancient Roman Aqueducts immersed in typical Mediterranean nature. The ride is relaxing, with many stops, the pace is slow, you get to see Rome off the beaten path, enjoying the surprising beauty of mother nature and ancient ruins, just a few kilometers apart from the hustle and bustle of the city center. So GET READY TO RIDE FOR ALMOST 15 KM (10 MILES), through some of the city’s most unique sightseeing, discover hidden spots in nature, see some of the unknown gems of Rome and get back to your place with perfect pictures. Other things to note: You will have to be able to ride for 15 km (10 miles), almost all in the plain, part on regular roads (with cars), plus part on unpaved bumping roads. Bring a bottle for water, sunglasses and cream in summer time, a raincoat if rain is expected.

You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . We will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two tipical italian sauces. The experience includes a delicious tasting of local cheese. We can also accomodate GLUTEN allergy guests for a very tasty fresh pasta and VEGAN guests for pasta without eggs. We will cook all pasta and the sauces made during the class, eating our differents kind of pasta done, sipping good italian wine. An express tiramisu preparation will follow as a dessert. Moreover, to all the participants will be offered complimentary, the exclusive Professional Chef Hat with logo of "Pastificio Faini". In addition to making homemade pasta we will prepare a different kind of sauces: "cacio e peep" or Amatriciana or Carbonara, Butter and sage or tomato and basil for vegetarian. I will teach you everything you need to be able to make 2 different types of pasta and 2 sauces at home! When we are finished we will cook, and eat our pasta together. Then we stop to have the best coffee in Rome in a very popular bar, we drink a glass of wine from the bottle that waits for us in a picnic basket behind the car and then the famous Italian ice cream. We drive through the romantic alleys where many shops are located , in the air we can smell the inviting aroma coming out the restaurants that serve typical Roman dishes. At each place, we will get pictures taken by the staff or from me. Each stop will be 10-15 minutes and the guests are free to visit the locations alone if they wish so.. Cook with one of the best chefs ever: obviously our grandma, Nonna Nerina, and the other Nonnas from Palombara! The granmas of our small village will show you how to prepare the perfect handmade pasta—no machines, just your hands, the freshest local ingredients, and love. All of these women started to make pasta in their childhood, keeping alive a tradition that is slowly disappearing. And they are ready to pass it to you! You’ll be part of our crazy big family for a day and join us as we walk the tiny medieval streets of Palombara Sabina to Grandma’s kitchen, located in the old winepress where my great-grandpa used to make wine that the community tapped straight from the barrel (or in Grandma's home... according to the weather). It's a special place for my family and the entire village. We will cook Ravioli, Fettuccine and Farfalle... you will be in a food coma at the end of the experience! Please Note: Nonna Nerina is 86 yo so she could feel tired. In that case there will be Grandma Angela, Auntie Giovanna and all the rest of the family to take care of you!!!

Be prepared to live a unique experience, in contact with dogs and nature! Take a break from the city chaos that fills our days every day. After an introduction to the world of truffles, we will begin our hunt. You will see how the trained dogs hunt for truffles and the passion they have, this being a very rewarding activity for them. Depending on the period we will go to different types of woods and the meeting point may change. Truffle hunting is also accessible to children (my dogs will be happy to play with them!). After the truffle hunting we will have a lunch with truffle dishes. The menu is vast so I don't suggest you have a big breakfast! We also have menus for vegetarians, celiacs, vegans and we can also change it according to your allergies or intolerances. During lunch we will have the opportunity to get to know each other better, drinking good wine and eating fresh seasonal truffles. Other things to remember. Long, comfortable trousers are required (ankles must be covered). I also suggest wearing a pair of boots. If you don't have them, sneakers are fine too.

During my cooking class, you will be able to immediately immerse yourself in a familiar and informal atmosphere, also thanks to the warm and welcoming ways of Mamma Nora. Before you know it, you will find yourself with an apron around your neck and ready to be part of her kitchen! We will cook inside the old celler of the Farm, as it is the coolest place we could find in summer! We will visit the garden to pick up some herbs, and for the brave ones, there will be a visit to our chicken coop! We'll taste some fresh specialities like mozzarella di bufala, parmesan cheese, ham, seasonal fruit, extra virgin oil and wine. Then I'll take you to my country home, away for a day from the confusion of the city where you'll find yourself surrounded by green, flowers and pets, you will learn the secrets of traditional italian cooking art, starting from fresh vegetable picked up from the garden. We'll finally enjoy the meal under the grape pergola with a glass of wine. My family, my dog, Billo ,and I will guide you in truffle hunting in our beautiful woods in Chianti. Truffle hunting is an ancient tradition in Tuscany, and has only one rule—respect nature. For this reason, it will be necessary to conduct a small briefing before going into the woods, a sacred place for truffle hunters. During the hunt, I will tell you about the truffle, the magic of its traditions, its history, mythology, and uses in the kitchen. You will learn how to recognize and distinguish a good truffle from other fake "truffles" of inferior quality. After the hunt, we will return home for a scheduled lunch or dinner, based on fresh, real truffles and served with our own wine and extra virgin olive oil. We will show you how to clean truffles and prepare typical truffle recipes, such as crostini al tartufo, tagliatelle al tartufo, and more.

We invite you to spend a relaxing day on our organic hilltop luxury farm in Tuscany, surrounded by vineyards and olive trees. For a day you will get away from the crowds, heat, noise and queues. Enjoy a day of nature, incredible views, friendly people, great food and wine! Our experience starts in Florence Santa Maria Novella Central Station where you will meet and we will help you buy the train tickets to San Miniato. The train ride to San Miniato will take 40 minutes. Upon arrival, we'll walk around the estate so you can see our vineyard and olive grown. We'll visit the gardens to gather ingredients for our lunch, which we'll prepare together. You'll find out how traditional Tuscan cuisine is simple, fresh, and delicious. Depending on the season, we might pick grapes, olives, wild asparagus, wild herbs, or even hunt for prized white truffles in autumn. During lunch we will taste our red and rosé wine together with our extra virgin cold pressed olive oil. After lunch you're welcome to kick back in the garden, take a swim in our 20 meters infinity pool filled with salted water (the pool is open form May to September), or stroll up to see a remote little church. Somos una familia romana divertida y única, todos nacieron y crecieron en Roma y si quieres probar lo que realmente son las tradiciones romanas (culinarias y de otro tipo), tienes que llamar a nuestra puerta. Nos encontraremos en nuestra maravillosa casa situada en la cima de la colina Gianicolo, un lugar histórico y céntrico y serás recibido con vino y aperitivos, historias divertidas y nuevos amigos. Durante nuestra clase de cocina de comida tradicional romana, te contaremos muchas historias sobre métodos culinarios y costumbres, transmitidas a través de generaciones. Comenzaremos preparando el tiramisú, seguido de la creación de pasta desde cero con huevos y, por último, preparando dos tipos diferentes de salsas. Tendrás la oportunidad de unirte a todos los alimentos que preparamos bebiendo vino de cortesía. Throughout the years, we have mastered different mosaic techniques, both traditional and modern. That is why you will find the studio full of original tools, sketches by famous Italian artists, and important mosaics masterpieces. The workshop will begin with an introduction to Roman mosaic technique and history. Afterwards, you will practice the principles of texture, composition and marble tile cutting to create your own mosaic to take home. It is fundamental to us to transfer the real techniques of Roman Mosaic craft. Therefore, your mosaic will be correct and based on strict rules. A master mosaicist will share important tips, and provide the assistance you need to ensure the best result.

we will meet at ciampacavallo, after a briefing and a short presentation of our activities we will have the first approach to the horses by taking care of them (feeding, giving water and cleaning their space). After that we will be ready to start a riding experience, so that we will take the horse, clean them, put on saddle and bridle and go out on the fields to reach the ancient appian street. We will pass trought the appian park, full of nature and archeological matter. Other things to note: this experience is suitable for beginners! Wear comfortable clothes, long pants, no sandals and no heels because it’s dangerous!
