Although chef Richard Blais told Zagat that his menu at Juniper & Ivy wouldn't use much molecular gastronomy, that doesn't mean the dishes aren't inventive and beautiful. Diners will find Dungeness crab with Meyer lemon curd and dill pollen decorated with locally foraged nasturtium; Carlsbad-harvested oysters served with charred tomatillo and horseradish ice cream pearls; and even a savory Dungeness crab beignet with "yuzunaise." But to focus on specific must-try items would do the menu a disservice. Since dishes change frequently - based on the availability of ingredients and/or the chef’s whim - it's hard to predict what might be offered on any given night.
