In a living room of an 18th century house, in the historic center of Villa de Leyva (one block above the main square). Concept under two clear premises: promoting the consumption of local ingredients –in direct relationship with peasant producers– and cooking with firewood, through an oven buried in the earth. They have a wide menu of obvious rustic cuisine. The recipes are not simple, on the contrary they are long elaboration and with a recognizable sense of creativity.

Nature

In Iguaque Fauna and Flora Sanctuary, the visitor can find the Sacred Lagoon of Iguaque that, according to Muisca mythology, is the cradle of humanity. Bachué, the mother of the Muisca people, emerged from this lagoon and for this reason, it is believed that a pilgrimage here cleanses the soul and purifies the spirit. There are a total of 7 lagoons of glacier origin in the Sanctuary. With altitudes between 2,400 and 3,800 MASL, the territory and its area of influence in the southern extreme contain one of the main areas of oak in the country. The Sanctuary is of vital importance as provider of ecosystem services such as source of water for human consumption for the populations of Villa de Leyva, Arcabuco and Chíquiza.

The valley where the first sons of Bachue settled was called the Valley of Saquencipa. Valley where rituals were developed and temples and astronomical observatories were established, whose vestiges were found by the Spanish in the conquest, being the object of destruction and demonization to achieve their conversion to the new religion. A few years ago, the archaeologist Silva Celis, from the Pedagogical and Technological University of Tunja, began excavations that would reveal an entire complex of archaeological remains that today are exhibited to visitors.

Beautiful towns of Alto Ricaurte

Due to the high paleontological, environmental, archaeological, cultural, architectural and intangible value of Alto Ricaurte and Iguaque, located in the Cundiboyacense highlands of the eastern Colombian mountain range; The decision was made to prepare the nomination file for the application for its inscription on the UNESCO World Heritage list, in the category of mixed heritage (natural and cultural).
Gachantivá exists since prehistoric times. In the Colony, Christian evangelization was directed by doctrinal priests, who had under their direction several commissions such as that of Gachantivá, evangelized by religious from Santo Domingo. They chose the appropriate sites to make their chapels with rudimentary architectural designs, as evidenced by the ruins of the church of Gachantivá Vieja. The town of Gachantivá was formed around the chapel, a municipality created in 1715, very close to Villa de Leyva, at the time of Spanish rule, in which the aborigines were displaced and dispossessed of their lands and wealth.

Its origin is prior to the conquest, ruled by a tributary chief of the Zaque de Hunza. During the 16th century it was commissioned and the doctrine of the Augustinians and Dominicans was established. At the end of the seventeenth century it was a shelter. Etymologically, Sáchica means Fortress or mansion of the Sovereign Chibcha. Once rich in water sources, today it is an area that makes us reflect on the importance of taking care of water sources.
