Roatan's cuisine like other Caribbean islands with shared history of Afro-Caribbean people and English pirates & settlers has its roots in Africa, England and Latin America. We love seafood and our vegetables are primary root vegetables, plus: green bananas, plantain, chattas and breadfruits which we call " bread kind." SEAFOOD WE LOVE & HOW WE EAT IT! FISH: steamed, fried, minced or in a brown gravy and tea soup. CONCH: conch soup, stewed conch, conch fritter or balls and most recently conch ceviche. SOUP We love soup and eat it year-round. SHRIMP Our favorite shrimp dish is coconut shrimp and in soups. Traditional island seafood stew Known as; coconut dinner, tapado or rundown is coconut milk-based s with fish & salted pork, root vegetables such as: yucca, malanga/taro, green bananas, ripe plantains and chatta or corn dumplings is inspired by the Garifuna traditional dish, the Machuca. Machuca is made similarly, with the mayor difference being it comes with a large mashed (machuca)plantain dumpling and no other vegetables. Fritters for breakfast with homemade jams, and tons of exotic bush cakes. BALEDAS Large flour or corn tortilla filled with refried beans, avocados, scrambled egg, chicken, beef or chorizo topped with a grated hard cheese or Honduran crema and pickled onions & veggies. Makes for an excellent and affordable breakfast. Baleadas are a relatively NEW addition to the island- brought over by the large ladino population from mainland Honduras who have made Roatan their home over the 20 yrs.
